Cuisine
At Tavola di Guido, our menu showcases the best of Tuscany’s bounty through a farm-to-table philosophy. Chef Guido Haverkock crafts refined, seasonal menus that blend Tuscan tradition with global inspiration. Ingredients come directly from our One Belvedere Tuscany Farm – just 3 km away -where we grow fruits, vegetables, herbs, eggs, honey, and olive oil using regenerative agriculture.
We also make many of our staples in-house, including bacon, vinegar, mustard, jams, kombucha, soy sauce, muesli, and fresh breads – ensuring every detail reflects our commitment to sustainability and culinary innovation.

Our tasting menus reflect the evolving creativity of Chef Guido Haverkock and his team, showcasing the best of seasonal Tuscan ingredients with global flair.
We offer our guests 3 tasting menus, each of which is repeated twice a week, each available in 3- or 5-course formats, including a dedicated vegetarian option.

In the kitchen and at the table, we use only our own organic extra virgin olive oil: a blend of Frantoio, Pendolino, and Moraiolo cultivars.
Alya, our Chianti Classico PDO, is crafted from century-old olive trees in Castellina in Chianti.
Amaya is our youngest expression: fresh, vibrant, and fruity, made from the first harvests of new trees.

Our wine selection is thoughtfully curated to reflect the spirit of Tavola di Guido’s cuisine – rooted in Tuscany, enriched by Italian terroir, and guided by emotion.
Handpicked by our sommelier, Carolina, the cellar highlights small organic and biodynamic producers, with a strong focus on Tuscan vineyards. Each year, we personally visit these winemakers, exploring their vineyards and tasting on-site to ensure authenticity, sustainability, and excellence.

From our farm to your fork
Our culinary philosophy is deeply connected to the land.
Sourcing primarily from One Belvedere Tuscany Farm, we grow the ingredients that shape our menus using regenerative and organic practices that respect the rhythm of nature.
We craft many of our ingredients in-house, from sun-dried tomatoes and mustards to handmade pasta and infused oils.
