Cuisine

The Restaurant, run by our Chef Guido Haverkock and his crew, offers cuisine made with the best ingredients Tuscany has to offer according to the season. 

Our One Belvedere Farm, less than 3 km away, provides us with fruits, vegetables, aromatics herbs, eggs, honey and extra virgin olive oil (EVO) derived from regenerative agriculture. The rest of our products are sourced from carefully selected Tuscan producers.

We proudly make our own staples such as bacon, vinegar, mustard, jams, kombucha, soya sauce, muesli, breads among others. 

Menu suggestions

Our tasting menu proposal represents the present moment of the preparation of the whole team and the kitchen itself.

We offer our guests 3 tasting menus, each of which is repeated twice a week.

The tasting menus are available in 3 or 5 courses for the whole table.

The vegetarian version will always be available.

Menus may be subject to change due to seasonality and product availability.
